mars' banana bread
a tweaked, spiced version of a recipe received from a friend
Ingredients:
3 Medium—Large ripe bananas
1/3 cup–melted butter
1 egg
1 tsp–baking soda
½ tsp–salt
¼ tsp–cinnamon
⅛ tsp–ground nutmeg
⅛ tsp–ground cloves
1 tsp–vanilla extract
1 cup–sugar
1 ½ cup–flour
Instructions:
Preheat oven to 350°F.
In a large mixing bowl, mash up the bananas until no large chunks remain. Add in the melted butter and whisk.
Crack in the egg, then add the baking soda, salt, cinnamon, nutmeg, and cloves, and whisk.
Add the vanilla, and mix in the sugar until fully incorporated.
Slowly mix the flour into the batter, making sure no clumps of it remain.
Grease a small loaf pan. Using a spatula, transfer the contents of the mixing bowl to the pan and smooth out the top.
Bake for 30 minutes, then cover with foil and return the pan to the oven for another 30 minutes or until fully baked. Check for doneness with a knife or skewer.
For a harder crust, remove foil for the last ~2 minutes of baking.
Let cool for a minimum of five minutes and enjoy!
